And in the distant 2006 in response to another request, we invited the client to an experiment. At that time, we had one of the first machines – fish injectors – on completion. Which are still being improved and are being manufactured at the plant. Now, these are completely different, modern injectors, in which all the accumulated experience in the production of injected fish is collected. The client brought to the experimental work muxun and nelma.
We honestly warned the client that we do not believe in the success of this event, since they had their opinion on this: before the needle pierces the skin, it will put pressure on the skin of the fish, and when the force of needle pressure exceeds the elasticity of the fish, it will pass into the thickness fish. But while the skin is resisting – the tender muscle fibers of the fish experience strong deformation changes – the structure of the fish tissue is destroyed.

Scales stood on end, the tender structure of the muscle tissue turned into mincemeat, weakly holding on to the skin and bones. But in weight the fish added 150g – almost 12%! But this increase in weight was of no practical importance.
The general evaluation commission found the fish not suitable for further processing.
Over the next fish decided not to scoff and injected a second muksun, cut into fillets.
Next came the filth of nelma for execution. Interest in the client for testing on the carcass noticeably cooled.
The result was expectedly good. After injection, the weight gain was about 17 percent. The condition of the fillet is excellent.
They went to the injections and belly muxun. I’ll tell you a secret – after smoking it turned out such delicacies! The yield after salting and smoking was close to the mass of the raw material.
The fish were gently rubbed with salt of the 2nd grind from the skin – to neutralize the mucus and salt to the side of the fillet. The amount of salt during dosing was not normalized, but it was noticeably reduced closer to the tail.
Here in this form placed a box of fish in the salted refrigerator with a temperature of +6C.
After a day, the fish was washed from the salt in running water, put into redistribution for 1.5 hours in an isotonic saline solution. Directly before smoking, soaked in running water for 10-15 minutes. The finished products were taken away so quickly that not all had time to try. The first muksunchik – a burnt with bulging eyes was recognized as relatively suitable – smoked pate on the skin with bones.
