A small batch of excellent quality dried roach was sent as a gift by our VIP client from the Altai Territory, who operates the largest fish drying chamber of the UVR-5 4×5 = 20 series manufactured by our company. Its capacity is 20 Euroram or up to 4 tons of fresh fish loading.
In addition to its beautiful appearance, the fish has an excellent taste and aroma of dried roach. The cold-curing technology is unique, which distinguishes our curing chamber from competitors. All processes of drying (removal of moisture using an external dehumidifier) on this and many other lots of fish took place at temperatures below 20 degrees. The moisture content of the finished fish is not more than 39%.
